STAINLESS STEEL NON-STICK COOKWARE – ARC-SPRAY TECHNOLOGY

 

Today's non-stick stainless steel cookware manufacturers use the "Arc-spray" technology to ensure that the non-stick surface lasts for many years. Arc-spraying is the process of applying white-hot droplets of stainless steel to the pan, which permanently binds to the surface and roughens it. A non-stick coating is then applied, permeating the textured surface and creating exceptional coating adhesion.

The criterion for cooking performance is the same for both uncoated and non-stick stainless steel pans: the thicker the base, the better the heat distribution. This is perhaps of even greater importance in non-stick pans, since consistent overheating will invariably degrade the non-stick surface. A thicker base will lessen the chance of overheating by reducing “hot spots”; however, care must be taken to ensure that an appropriate amount of heat is used at all times.
